Crispy Charred Roasted Brussel Sprouts

I think we’ve all seen cartoons or caricatures of people, most of the time children, hating on having to eat Brussel sprouts. Personally, we never really got that. But, we can’t really blame the people who don’t like Brussel sprouts. Too often most vegetables are served undercooked, and under seasoned, resulting in a flavourless, green mush.

Vegetables, when cooked properly, result in something like this. Crispy and flavourful. Basically, the perfect side dish. So, using Eric’s recipe and method, give Brussel sprouts their much deserved second chance.

Ingredient list
  • 1 thick cut ribeye steak (approximately 1 lb)
  • 1 tablespoon neutral cooking oil
  • 1/2 cup homemade beef stock
  • 1/2 cup good quality red wine
  • 1 large sprig of fresh thyme
  • 2 cloves garlic
  • 2 small shallots
  • 1 tablespoon butter
  • Salt and pepper to taste

Most of these ingredients can be found in almost all groceries.
