Naturally beautiful and rich in biodiversity, the Mekong River flows through the heart of Vietnam, ending at the "Roof of the World," the Tibetan Plateau. If you've traveled or backpacked through Asia, you've likely come across this river multiple times. Here at the Mekong River delta, nature and civilization collide. Floating houses, riverside markets, and sampan boats occupy the surface of the rich and muddy waters of this ancient river. Vegetation is lush, and fish is plentiful. Here, the day ends and begins in the same way-- with the Vietnamese sun.
The best way to experience the culture is through the food. Hot pot is a common and ubiquitous cooking method throughout Vietnam and East Asia. Variety comes from the ingredients and foodstuffs used. With the bountiful fish population, locals use fermented fish as a base for their hot pot, which is called "Lẩu Mắm," and is incidentally one of Vuong Anh's favorite dishes.
Cooking with local ingredients is a must to get a taste of the region's cuisine. In the spirit of learning and deepening her experience, Vuong Anh takes it a step further and adapts the cooking environment of the locals by cooking on a boat.
In the Mekong River delta, food is earned through labor and arduous effort. Cooking is not a hobby, but a necessity and a way of life. It is a reward for a day's hard work. With the continuous rocking of the boat, heavy baskets, and cramped cooking space, Vuong Anh has certainly earned hers. She enjoys her well-deserved meal as her day ends with the setting of the Vietnamese sun.
