Karen gives us a tastier way to eat our bananas and oats, and a healthier way to enjoy our cookies. Being creative and versatile is a very important skill to have in the kitchen, and Karen tries to instill these ideas on us by encouraging us to try different ingredients for our Surprise Cookies. Not only are they easy to make and tasty, they also keep very well in the freezer. This can be made in a variety of ways, including vegan, and sugar-free!

Ingredient list
  • 3 bananas, ripe, large
  • 1/4 cup vegetable oil
  • 1 egg (optional)
  • 1 1/2 teaspoons vanilla
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon Kosher salt
  • 2 1/2 cups old fashioned oats
  • Cooking spray
  • Additional Ingredients:
  • 1/2 cup of any two of the following (1 cup total):
  • Raisins, any color
  • Coconut, shredded
  • Nuts, chopped, any type
  • Chocolate chips, dark or semi-sweet
  • Fruit, dried, chopped, any type
  • Dates, chopped
Where do I get these?
  • Most of these ingredients can be found in almost all groceries.
