Joining Rossella is Nonna Angelina, and she immediately makes it known that she is in charge. Together, they prepare a dish called “Anellini al Forno”, a dish native to Nonna Angelina’s home region of Sicily. Anellini is the smaller version of anelli, which are basically small rings of pasta. If you’re still having trouble thinking what anellini is, think SpaghettiOs.  

Italian cuisine is generally characterized by its simplicity. So, it is absolutely imperative that you use fresh or high quality ingredients. The quality of the ingredients heavily determines the quality of the dish. Here, nothing is thrown out. Like Nonma Angelina says, extra sauce can be used as garnish at serving time!

Good food takes patience and time. While this video may be longer than most, we assure you that this one is absolutely worth it.

Ingredient list

For the Meat:
1 pound ground mixed meat (beef, pork and veal)
1 large egg
2 cloves garlic, chopped
1/4 cup plain bread crumbs
1/4 cup grated pecorino cheese
1 small onion, chopped
3 tablespoons extra virgin olive oil
28 ounces crushed tomatoes, use 1/2 cup for to brown the meat and the remainder for the  
Tomato Sauce
1/2 cup peas
2 basil leaves
salt & pepper, as desired

For the Tomato Sauce:
3 tablespoons extra virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
remainder of the can of crushed tomatoes from above
1/2 cup water
2 basil leaves
1/2 cup peas
salt & pepper, as desired

For the Bechamel Sauce:
4 ounces butter
1/2 cup all purpose flour
2 cups milk, lukewarm
1/2 cup grated Parmigiano cheese
black pepper, as desired
pinch nutmeg

For the Pasta:
1 pound Anellini pasta
