Tradition is very important in Italy, even more so for their nonnas. Even though Nonna Carmela was born in the United States, she still continues on with this mentality, and plans to pass it on to her children and grandchildren. Following this trend, Nonna Carmela is here to share her recipe for a dish that is very close to her roots, and is a representative of Cucina Povera(Peasant Cuisine): Poached Eggs with Peas.

Ingredient list
  • 3 tablespoons extra virgin olive oil
  • 1 small onion, chopped
  • 32 ounces chicken broth
  • 1 pound fresh peas, shelled, or frozen peas
  • salt and black pepper to taste
  • 3 large eggs
