Carnitas, when translated, literally means "little meats," and it's honestly a disservice that something so delicious and flavorful is named that way. It is the star of whatever taco, burrito, or nachos that you will have. Delicious when eaten in chunks or shredded, enough to rival even the tastiest barbecue pulled pork. It is usually braised in lard, traditionally using fat trimmed from the meat used. The traditional way of cooking Carnitas is almost impossible to do in most modern home kitchens, but chef Rosie's easy and efficient method certainly doesn't fall behind in taste.
